Dinner conversation was all about economic development in the Northwest Territories (NWT) on Wednesday night as delegates at the Opportunities North Conference enjoyed an NWT-themed gala dinner.

“Of course the bread and butter of our economy is still resource development,” Minister Wally Schumann quipped in introducing the four-course meal representative of the NWT’s emerging agriculture, fishing and small business sectors.

Here’s a look at the “Taste the Spectacular” menu that had tongues wagging and taste buds cheering about the Northwest Territories on Wednesday night.

Freshly Baked Rustic Rolls
and Flatbreads
Warm and wonderful with a touch
of creamy butter added.

Cream of Broccoli Soup
Emerald-green broccoli grown in Norman
Wells, NWT combined with Canadian
cheese in a creamy broth.

Devilled Polar Eggs
farmed in Hay River, NWT
resting on a ripe garden of carrot, radish,
cherry tomato and leafy kale. The kale
comes from Inuvik, NWT. Served with goat
cheese and a herb vinaigrette drizzle.

Baked Whitefish Filet
with Potato Pave
Fresh whitefish from the depths of
Great Slave Lake drizzled with a rich Caper
Beurre Blanc sauce. Served with scalloped
potatoes grown in Norman Wells, NWT
along with steamed seasonal vegetables.

Sticky Toffee Pudding
with Birch Syrup
Rich caramel toffee flavors are touched
with Sapsucker Birch Syrup that has been
tapped in spring from NWT birch trees as
they awake from a long cold winter.

spectacular NWT beers tonight before,
during or after dinner.

Try our Kicksled Cream Ale
An ode to the humble sleds pushed by foot
across the frozen ice on Yellowknife Bay.
This ale is crisp and dry with a mild hop
bitterness – the perfect go-to beer after
a long day enjoyed on the lake.

Try our Honey Bucket
Nut Brown Ale
Forged in the backwoods of the NWT,
this beer goes down smooth, crisp
and perhaps a bit nutty. A mixture of
chocolate and honey malts lend to rich
cocoa flavors followed by dry toasted
notes and enough sweetness that lingers
until your next sip.
